Honey Wheat Bread

Ingredients (Makes 6 small loaves)

  • 2 1/4 teaspoons dry instant yeast
  • 1 1/2 cups warm water
  • 4 tablespoons sugar
  • 2 cups bread flour
  • 1 3/4 cups whole wheat plain flour
  • 1 teaspoon salt
  • 3 tablespoons cocoa powder
  • 2 teaspoons espresso powder/ coffee
  • 2 tablespoons molasses/ 1:1 sugar to water
  • 2 tablespoons butter
  • 1/4 cup honey
  • oats (optional)

Method

  1. Mix yeast, water and sugar and let sit for 5 minutes until foaming
  2. In a food processor or a bowl mix all dry ingredients aside from oats
  3. Mix in yeast mixture, honey, butter,  and molasses into dry ingredients
  4. Add flour or water in tablespoons until dough is tacky but won't stick to your hands when touched
  5. Place dough in a lightly oiled bowl, cover and let rise until doubled for 2 hours at room temperature or at 40°C in an oven for 1 hour
  6. Line a tray with foil or parchment paper (if using foil and a tablespoon of oil and spread around)
  7. Shape dough into six small loaves (roughly 15x5 cm) and place on tray
  8. Splash water onto top of uncooked loaves and sprinkle oats on top
  9. Proof shaped bread for another 1 - 1 1/2 hours
  10. Preheat oven to 180°C and bake bread for 25-35 minutes
  11. Remove bread and serve warm with butter
