Bruschetta

Ingredients (Makes 6)

  • 6 baguette slices
  • 2 tablespoons olive oil
  • 2  garlic cloves (minced)
  • 4 roma tomatoes (seeded and diced)
  • 1 tablespoon finely chopped red onion (optional)
  • 2 tablespoons fresh chopped basil
  • 30g (1/4 cup) diced mozzarella
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • balsamic glaze drizzle (to taste)


Method

  1. Heat the olive oil and garlic over low heat until garlic softens (about 5 minutes)
  2. Combine chopped tomatoes, onion, basil, and mozzarella in a bowl with salt and pepper
  3. Add olive oil and garlic to bowl. Leave a small amount of oil in the pan to toast the baguette slices
  4. Return to the pan and turn the heat up to medium
  5. Add the baguette slices and toast until golden brown
  6. Top the toasted baguette slices with the bruschetta mixture and drizzle with the balsamic glaze
